We are obsessed with the sourcing of our food. The closer to Moscow the better. We coordinate with local farmers to grow special types of chilies, potatoes, greens and all sorts of stuff. If they are growing something, we’re buying it. We believe that food should nourish your body and also your heart and mind. For this reason, sourcing is the foundation of our kitchen.

VEGETABLES

Maialina’s menu incorporates a wide variety of fruits, veggies, flowers, and herbs from local farmers on the Palouse. We are dedicated to maintaining our close relationship with our local purveyors and work with them to source the majority of our seasonal produce. In the winter, we seek local root vegetables and pickle remaining summer produce. We coordinate with local farmers to grow special types of chilies, potatoes, greens and all sorts of stuff.

PROTEINS

Everything from Mary’s chickens to local eggs to pork from Pacific Northwest farmers comes to Maialina through a long-curated relationship with providers we trust and hold accountable for animal welfare. Our beef is raised on the North Central plains of Washington and is antibiotic free, our fish selections are rated a “best choice” in sustainability from the Monterey Bay Aquarium Seafood Watch, our chicken is organic and certified Step 3 by the Global Animal Partnership. The Global Animal Partnership is a nonprofit charitable organization that is dedicated to improving and enriching the lives of animals in agriculture.
